Its Hyperforce infrastructure runs on public cloud and lets customers choose regions, including the US, UK and Germany; the EU Operating Zone, a paid offering, keeps data of the products it covers inside the EU. Salesforce's public pages do not state which of these regions and options apply to Data 360, so a European organisation should obtain written confirmation of the region and of any data flows outside it.
